Description
A quick and tasty Black Bean Quesadilla recipe featuring a savory black bean filling seasoned with taco spices, melted Mexican cheese, and a perfectly crispy flour tortilla. Ready in just 20 minutes, this vegetarian dish is ideal for a satisfying lunch or dinner.
Ingredients
Main Ingredients
- 3 tablespoons olive oil (divided)
- ½ small onion, chopped
- 1 small jalapeño, chopped
- 1 (15-ounce) can black beans, rinsed and drained
- 1 tablespoon taco seasoning
- ¼ teaspoon salt
- 1 cup shredded Mexican cheese blend
- 4 small flour tortillas (8-inch size)
Instructions
- Sauté Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chopped onions and jalapeño peppers and sauté for about 3-4 minutes, until they become soft and translucent.
- Cook the Black Bean Filling: Add the rinsed and drained black beans, taco seasoning, and salt to the skillet. Cook while mashing the beans slightly with the back of a spatula until warmed through, approximately 2 minutes.
- Prepare the Quesadillas: Wipe the skillet clean and heat another tablespoon of olive oil over medium-high heat. Lay the tortillas flat on a surface. Divide the black bean mixture evenly, spreading ¼ on each tortilla. Sprinkle the shredded Mexican cheese blend evenly over the beans, then fold the tortillas in half.
- Cook the Quesadillas: Place two folded quesadillas on the heated skillet. Cook for about 3 minutes on each side until the tortillas are crispy and the cheese has melted. Repeat the process with the remaining 1 tablespoon of olive oil and the other two quesadillas.
- Serve: Serve the quesadillas warm with your choice of salsa and/or sour cream if desired.
Notes
- For a spicier quesadilla, add extra jalapeño or sprinkle some crushed red pepper flakes.
- Use whole wheat or corn tortillas to make this dish gluten-free, though cooking time may vary.
- To make the quesadillas vegan, substitute the cheese with a plant-based cheese alternative.
- Pressing the quesadillas with a spatula during cooking helps achieve an evenly crispy texture.
- Leftover quesadillas can be reheated in a skillet or air fryer for best results.
