Description

A refreshing and colorful Berry Parfait featuring layers of mixed fresh berries, creamy coconut pudding, crunchy vanilla wafer cookies, and topped with coconut flakes and sliced almonds. Perfect for a light dessert or a sweet snack, this no-bake parfait is easy to prepare and delightfully tasty.

Ingredients

Berries Mixture

  • 4 cups mixed fresh berries (strawberries, blueberries, blackberries, raspberries)
  • 1 tablespoon granulated sugar
  • 1 tablespoon + 1 teaspoon fresh lemon juice

Cookie Layer

  • 1 cup vanilla wafer cookies, crushed (or graham crackers)

Pudding Layer

  • 1½ cups whole milk
  • 1 package (3.4-ounce) coconut or vanilla pudding mix
  • 4 ounces whipped topping, thawed (½ small tub)

Toppings

  • ¼ cup shredded coconut flakes (or coconut chips)
  • ⅓ cup sliced almonds

Instructions

  1. Prepare the berries: Remove stems from all berries and quarter the strawberries. In a medium bowl, combine berries with granulated sugar and all the fresh lemon juice. Stir gently and set aside to macerate.
  2. Crush the cookies: Place vanilla wafer cookies in a plastic bag or bowl and crush them into coarse chunks using the bottom of a glass. Set aside.
  3. Whisk pudding: In a medium bowl, whisk together the whole milk and pudding mix for 2 to 3 minutes until the mixture starts to thicken. Refrigerate for 10 minutes to let it fully set.
  4. Fold in whipped topping: Gently fold the thawed whipped topping into the set pudding mixture until well combined and smooth.
  5. Assemble parfaits: Evenly distribute the crushed cookie pieces into the bottom of each of the 4 parfait glasses.
  6. Add berries layer: Spoon 2 tablespoons of the mixed berries evenly over the cookie layer in each glass.
  7. Spoon pudding layer: Carefully add 2 tablespoons of the pudding mixture over the berries layer in each glass.
  8. Repeat layering: Add another 2 tablespoons of berries followed by 2 tablespoons of pudding, then a final layer of 2 tablespoons of berries to each parfait, creating three layers of berries in total.
  9. Top with coconut and almonds: Sprinkle shredded coconut flakes and sliced almonds on top of the final berry layer as desired.
  10. Serve or store: Serve the parfaits immediately or cover and refrigerate until ready to eat.

Notes

  • Use fresh, ripe berries for the best flavor.
  • You can substitute vanilla wafer cookies with graham crackers for a different texture.
  • For a dairy-free version, use non-dairy milk and whipped topping alternatives.
  • Assemble parfaits just before serving to keep cookies crunchy.
  • Chill pudding thoroughly to ensure proper consistency before folding in whipped topping.
  • Adjust sweetness by adding more or less sugar to the berries according to taste.
