Ingredients
Chicken and Seasoning
- 2 1/2 tsp smoked paprika
- 2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 2 lb chicken breast
- 2 cups BBQ sauce
Coleslaw
- 1/4 cup mayo
- 1 tbsp apple cider vinegar
- 1 tsp lime juice
- 1/2 tsp sugar
- 3 cups coleslaw mix (or thinly sliced cabbage)
Instructions
- Prepare the seasoning and coat chicken: In a small bowl, combine smoked paprika, garlic powder, salt, onion powder, and black pepper. Sprinkle this spice mix evenly over the chicken breasts, using your hands to ensure they are fully coated for maximum flavor penetration.
- Slow cook the chicken: Place the seasoned chicken breasts into your slow cooker. Pour 2 cups of BBQ sauce over the chicken making sure it is well covered. Set the slow cooker to high and cook for 2.5 hours, or alternatively, cook on low for 4 to 5 hours until the chicken is tender and easily shreds.
- Make the coleslaw: While the chicken cooks, prepare the coleslaw. In a large bowl, whisk together the mayo, apple cider vinegar, lime juice, and sugar until smooth. Add the coleslaw mix or thinly sliced cabbage, then toss gently to coat the vegetables evenly in the dressing.
- Assemble and serve: Once the chicken is cooked, shred it inside the slow cooker or on a cutting board using two forks. Mix the shredded chicken with the remaining BBQ sauce from the cooker. Serve the BBQ chicken topped with fresh coleslaw in slider buns or enjoy the combination in a bowl for a delicious and hearty meal.
Notes
- For a spicier twist, add a pinch of cayenne pepper to the seasoning mix.
- If you prefer a milder BBQ flavor, reduce the BBQ sauce amount to 1 1/2 cups.
- Coleslaw can be made a few hours ahead and refrigerated to enhance the flavors.
- Slider buns are optional; the recipe also works well served as a low-carb bowl meal.
- Leftovers keep well in an airtight container in the fridge for up to 3 days.
