Description

These Baked Honey BBQ Chicken Bites are crispy, flavorful, and perfect for a quick weeknight dinner or a party appetizer. Coated in a crunchy cornflake crust and baked to golden perfection, then tossed in a sweet and tangy homemade honey BBQ sauce, these chicken bites are juicy and irresistibly delicious without the extra fat of frying.

Ingredients

Chicken & Coating

  • 2 pounds (907g) boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 5 cups (140g) corn flakes cereal, crushed lightly
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 2 large eggs
  • 1/4 cup (60g/ml) milk

Honey BBQ Sauce

  • 3/4 cup (222g) your favorite BBQ sauce (Sweet Baby Ray's Original recommended)
  • 1/4 cup (85g) honey
  • 1/4 cup (68g) ketchup

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent sticking and for easy cleanup.
  2. Coat Chicken with Flour: Place the bite-sized chicken pieces in a large bowl. Add the all-purpose flour and stir thoroughly to coat each piece evenly. Set aside this bowl for the next steps.
  3. Prepare Cornflake Mixture and Egg Wash: In another large bowl, combine the crushed corn flakes, salt, black pepper, garlic powder, and smoked paprika and mix well. In a small bowl, whisk together the eggs and milk until smooth.
  4. Bread the Chicken: Dip each floured chicken piece into the egg mixture, allowing excess to drip back into the bowl. Immediately roll the chicken in the cornflake mixture, pressing lightly to ensure an even coating. Shake off any excess coating and place the pieces onto the prepared baking sheets. Repeat for all chicken bites.
  5. Bake the Chicken Bites: Bake in the preheated oven for 18 minutes, flipping the pieces once halfway through to ensure even browning. This will produce a crispy, golden crust. After baking, remove from oven and let cool for 5 minutes on the baking sheets.
  6. Make the Honey BBQ Sauce: While the chicken bakes, combine the BBQ sauce, honey, and ketchup in a small saucepan over medium heat. Cook the sauce for about 5 minutes, whisking occasionally to blend the flavors and slightly thicken the mixture.
  7. Toss Chicken in Sauce: Transfer the baked chicken bites to a large bowl. Pour the warm honey BBQ sauce over the chicken and gently stir until all pieces are thoroughly coated with the delicious sauce.
  8. Serve: Serve the honey BBQ chicken bites warm. They make a fantastic appetizer or a crowd-pleasing main dish.
  9. Storage and Reheating: Store any leftovers in an airtight container in the refrigerator for up to one week. To reheat, use a microwave until the chicken is heated through.

Notes

  • For extra crunchiness, use gluten-free corn flakes to make this recipe gluten free.
  • You can substitute the chicken breasts with chicken thighs for a juicier texture.
  • If you prefer spicy, add a pinch of cayenne pepper or chili powder to the cornflake mixture or sauce.
  • Keep paper towels handy when breading chicken, as the egg mixture can be messy.
  • Baking rather than frying reduces the fat content while still providing a crispy coating.
  • Make sure to flip the chicken halfway through baking to ensure the coating crisps on both sides.
