Description

This Baked Feta Salmon recipe combines fresh Atlantic salmon with a vibrant mix of cherry tomatoes, green peppers, red onions, kalamata olives, and crumbled feta cheese, all baked together with a delightful blend of herbs and spices for a quick, flavorful, and healthy meal.

Ingredients

Fish and Vegetables

  • 6 ounces MOWI Essential Fresh Atlantic Salmon
  • 1 cup cherry tomatoes (quartered)
  • ¼ cup green pepper (chopped)
  • ¼ cup red onion (chopped)

Seasonings and Garnish

  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons kalamata olives (pitted)
  • 1 garlic clove (pressed)
  • ¼ teaspoon salt (divided)
  • ¼ teaspoon oregano (divided)
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon crushed red pepper
  • Fresh basil (for garnish)

Instructions

  1. Preheat and Prepare Salmon: Preheat your oven to 400°F (200°C). Pat the salmon dry with a paper towel to remove excess moisture, which helps achieve better baking results.
  2. Mix Vegetables and Seasonings: In an oven-safe baking dish, combine quartered cherry tomatoes, chopped green pepper, chopped red onion, crumbled feta cheese, pitted kalamata olives, pressed garlic, half the salt (⅛ teaspoon), and half the oregano (⅛ teaspoon). Drizzle with the extra virgin olive oil and gently toss to mix all ingredients well.
  3. Arrange Salmon and Add Remaining Seasonings: Place the salmon fillet in the center of the baking dish surrounded by the vegetable and feta mixture. Sprinkle the remaining oregano and crushed red pepper over the top of the salmon. Optionally, drizzle a little more olive oil over the salmon for added flavor and moisture.
  4. Bake the Dish: Bake in the preheated oven for 15 minutes, or until the cherry tomatoes soften and the salmon is cooked through and flakes easily with a fork. Check that the internal temperature of the salmon reaches at least 145°F (63°C) for safe consumption.
  5. Garnish and Serve: Remove the dish from the oven and garnish with fresh basil leaves. Serve immediately, optionally alongside your favorite side dish such as roasted vegetables, rice, or a fresh salad.

Notes

  • You can adjust the crushed red pepper according to your preferred spice level.
  • Ensure the baking dish is properly oven-safe to avoid any accidents during baking.
  • For a dairy-free or vegan variation, omit feta cheese and replace salmon with a plant-based protein.
  • This recipe is suitable for a single serving; multiply ingredients accordingly for more servings.
  • Fresh herbs add the best flavor, but dried basil can be used if fresh is not available.
