Description

This delicious Baked Feta Potatoes recipe combines crispy roasted potatoes with creamy baked feta, infused with garlic, herbs, and a hint of honey and chili flakes. Perfect as a flavorful side dish or a vegetarian main, it’s easy to prepare and perfect for cozy meals.

Ingredients

Potatoes and Seasonings

  • 2 large baking potatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chilli flakes
  • 2 tbsp olive oil

Cheese and Flavorings

  • 1 200g block of feta
  • 1 head of garlic (top cut off)
  • 1 lemon, halved
  • 1 tbsp honey
  • 1/4 cup (20g) fresh basil

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (390°F) to prepare for roasting the potatoes and garlic.
  2. Par-boil Potatoes: Wash and cube the potatoes, then add them to a saucepan filled with water. Bring to a boil and cook for 6-8 minutes (no more than 10) to soften them slightly without fully cooking. Drain and steam dry for 2-3 minutes.
  3. Season Potatoes: Place the par-boiled potatoes in a baking dish. Add thyme, oregano, salt, black pepper, and olive oil. Stir everything to coat the potatoes evenly with the seasonings and oil.
  4. Prepare Garlic: Drizzle the garlic head with a little olive oil, wrap it in foil, and place it into the baking dish alongside the potatoes.
  5. Roast Potatoes and Garlic: Roast the potatoes and garlic in the oven for 30-40 minutes until the potatoes are golden, crispy, and nearly cooked through.
  6. Add Feta and Lemon: Remove the baking dish from the oven, take out the garlic head, and place the block of feta in the middle of the tray. Optionally, dip one side of the feta in the seasonings before placing. Squeeze half of the lemon over the dish.
  7. Bake Feta and Potatoes: Return the dish to the oven and bake for another 15 minutes until the feta is softened and slightly golden.
  8. Prepare Roasted Garlic: Once the garlic is cool enough to handle, squeeze the softened garlic cloves out of their skins and mash them with the flat side of a knife.
  9. Combine Flavors: Stir the mashed roasted garlic (using the whole head for strong flavor or 1-2 teaspoons for milder taste), the juice of the remaining lemon half, and fresh basil into the potatoes and baked feta gently, mixing to combine.
  10. Finish and Serve: Drizzle honey over the potatoes, sprinkle with shredded basil and red chili flakes for a sweet, spicy finish. Serve immediately and enjoy your flavorful baked feta potatoes!

Notes

  • Par-boiling the potatoes ensures they cook through without burning during roasting.
  • Adjust the amount of red chili flakes according to your spice preference.
  • You can use fresh herbs instead of dried for a brighter flavor if preferred.
  • Roasted garlic adds a mellow, sweet flavor; use less if you want a milder garlic taste.
  • This dish can be served as a side or a vegetarian main accompanied by a fresh salad.
