Description

Baked Feta Eggs is a simple, flavorful breakfast or brunch dish featuring creamy baked feta cheese surrounded by perfectly baked eggs. This recipe offers a delicious Mediterranean-inspired meal that's easy to prepare in under 30 minutes, making it ideal for busy mornings or a special weekend treat. Serve it with pita pockets and fresh herbs like basil or mint for a wholesome, satisfying dish.

Ingredients

Primary Ingredients

  • 1 (8-ounce) block feta cheese
  • 12 large eggs
  • 2 tablespoons extra virgin olive oil (plus more for greasing the baking dish)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For Serving

  • Pita pocket (for serving)
  • Fresh basil and/or mint (for serving)

Instructions

  1. Preheat and Prepare the Baking Dish: Preheat your oven to 400°F (200°C). Grease an 8x11-inch baking dish generously with olive oil to prevent sticking and help the eggs cook evenly.
  2. Arrange Feta and Eggs: Place the entire block of feta cheese in the center of the prepared dish. Carefully crack the 12 eggs around the block of feta. Drizzle the 2 tablespoons of extra virgin olive oil evenly over the feta and eggs. Season the eggs with ¼ teaspoon salt, then season both the eggs and feta with ¼ teaspoon black pepper.
  3. Bake the Dish: Place the baking dish in the preheated oven and bake for 18 to 22 minutes. Bake until the feta cheese softens and melts slightly, and the egg whites around the edges are set but still tender.
  4. Scramble Together: Remove the dish from the oven. Using a fork, gently scramble the eggs and feta together. It's okay if some egg whites look slightly wet at this stage; they will continue to cook from residual heat in the baking dish.
  5. Serve: Serve the baked feta eggs warm either on their own or scooped into pita pockets. Garnish with fresh basil or mint leaves to add a fresh herbal note to the dish.

Notes

  • Use a fresh block of feta cheese for best melting results and flavor.
  • If you prefer your eggs more cooked, bake closer to 22 minutes; for runnier yolks, lean towards 18 minutes.
  • Greasing the baking dish with olive oil helps prevent sticking and adds richness.
  • Pairing the dish with pita pockets makes it a portable and filling meal.
  • Fresh herbs like basil or mint complement the salty feta and add brightness.
  • This dish can be easily doubled for larger groups by using a bigger baking dish.
