Description
This authentic and smoky Baba Ganoush recipe features charred, roasted eggplants blended with tahini, garlic, lemon juice, and olive oil to create a creamy Middle Eastern dip full of rich, earthy flavors. Perfect as an appetizer or side, this easy-to-make spread is beautifully garnished with fresh parsley and olive oil.
Ingredients
Main Ingredients
- 2 medium eggplants (approx 2 to 2 ½ pounds total)
- 3 tablespoons tahini
- 2 tablespoons extra-virgin olive oil
- 1 ½ tablespoon lemon juice
- 1 garlic clove (minced)
- ¼ teaspoon salt (or more to taste)
- 1 to 2 teaspoons chopped parsley (for garnishing)
Instructions
- Roast eggplants. Turn your stovetop to medium-high heat and place your eggplants directly above the flames. Use tongs to carefully rotate the eggplants every 3 to 4 minutes to ensure even charring. Roast for about 15 minutes until the skin is deeply charred and the eggplants start to deflate, indicating they are cooked through.
- Steam eggplants. Place the roasted eggplants in a large bowl and cover with plastic wrap. Allow them to steam and cool for 15 minutes; this helps loosen the flesh and allows excess moisture to release, which is essential for the right consistency in your dip.
- Scoop and chop the flesh. Cut the eggplants in half lengthwise and scoop out the soft flesh onto a cutting board. Roughly chop the flesh to break apart the stringy bits for an even texture in the final dish.
- Mix everything together. Transfer the chopped eggplant to a large mixing bowl and mash it up with a fork until you reach a chunky consistency. Add in the tahini, lemon juice, olive oil, minced garlic, salt, and chopped parsley. Stir well until all the ingredients are fully combined and the flavors meld together.
- Garnish and serve. Spoon the baba ganoush into a serving bowl and garnish with extra chopped parsley and a drizzle of olive oil. Serve with pita bread, fresh vegetables, or use as a spread.
Notes
- Roasting the eggplants directly over the flame imparts a delicious smoky flavor essential to authentic baba ganoush.
- Allowing the eggplants to steam after roasting helps to soften the flesh and makes it easier to mash.
- You can adjust the amount of lemon juice and garlic according to your taste preference.
- For a smoother texture, you can use a food processor instead of mashing by hand, but traditional baba ganoush is usually chunky.
- Serve fresh and consume within 2-3 days, stored in an airtight container in the refrigerator.
