Description

This Authentic Chiles Rellenos recipe showcases a traditional Mexican favorite featuring poblano peppers stuffed with a delightful blend of queso fresco, mozzarella, and sautéed onions, coated in a seasoned flour and fluffy egg batter, then fried to golden perfection. Perfect for a family meal or special occasion, it highlights classic techniques and flavors with easy-to-follow steps and helpful tips.

Ingredients

Peppers

  • 6 poblano peppers (can also use pasilla peppers), rinsed and dried

Batter and Coating

  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp oregano
  • 1 tsp garlic powder with parsley (or plain garlic powder)
  • 4 eggs, separated (yolks and whites)

Filling

  • 1/2 cup onion, diced
  • 8 oz queso fresco, crumbled (about 1 ½ cups)
  • 8 oz mozzarella cheese or other white cheese, shredded (about 2 cups)

For Frying

  • Oil for frying (enough for about 1.5 inches in skillet)

Instructions

  1. Char the Peppers: Heat a griddle to medium-high heat and cook the poblano peppers, turning every few minutes, until all sides are charred, about 15-20 minutes. Alternatively, you can broil them in the oven until skin chars.
  2. Steam the Peppers: Place the charred peppers in a sealed plastic bag and let them rest for 15-20 minutes to loosen the skin.
  3. Prepare Flour Mixture: In a large shallow bowl, combine the flour, salt, pepper, oregano, and garlic powder. Set aside for coating.
  4. Peel the Peppers: Remove peppers from the bag and carefully peel off the charred skin.
  5. Slice and Seed: Make a vertical slit on one side of each pepper from stem to tip. Remove seeds using a spoon or disposable gloves if handling by hand.
  6. Stuff the Peppers: Fill each pepper with about 1/4 cup queso fresco, a heaping tablespoon of diced onion, and 1/4 cup shredded mozzarella or white cheese. Gently press the edges to seal; toothpicks can be used if needed to keep them closed.
  7. Whip Egg Whites: Using a handheld mixer, whip the egg whites in a large bowl until fluffy with soft peaks.
  8. Combine Yolks: Add the egg yolks to the whipped whites and whisk gently until just combined. Set aside this egg batter.
  9. Heat Oil: Preheat a large skillet over medium-high heat with about 1.5 inches of oil ready for frying.
  10. Coat Peppers in Flour: Roll each stuffed pepper in the flour mixture, patting gently so the flour coats evenly and the seam remains closed.
  11. Dip in Egg Batter: Carefully dip the floured pepper into the egg batter, keeping it closed and ensuring it’s fully coated.
  12. Fry the Peppers: Place the pepper gently into the hot oil and fry about 3 minutes per side, or until golden brown and crispy. Fry in batches, about 3 at a time, without overcrowding the pan.
  13. Serve: Remove from oil, drain on paper towels if desired, and serve warm. Enjoy your authentic chiles rellenos!

Notes

  • For an alternative method, peppers can be broiled in the oven instead of grilled on a griddle to char the skin.
  • Using toothpicks to seal stuffed peppers can prevent them from opening during frying.
  • Wear disposable gloves when removing seeds to avoid irritation from the pepper oils.
  • Make sure oil is sufficiently hot before frying to achieve a crispy exterior without absorbing excess oil.
  • Serve with salsa, crema, or a side of rice for a traditional meal experience.
