Description

Delicious Asian Grilled Salmon Skewers marinated in a flavorful blend of honey, garlic, ginger, and coconut aminos, then grilled to perfection and garnished with sesame seeds and scallions. This quick and easy recipe serves as a healthy and vibrant main course that's perfect for any occasion.

Ingredients

Salmon Skewers

  • 1.5 lbs salmon (skinless and bones removed)
  • 2 cloves garlic (minced)
  • 1 tbsp grated ginger
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp chopped scallions
  • 1 tsp white sesame seeds

Marinade and Sauce

  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/4 cup coconut aminos (or soy sauce/tamari)

Instructions

  1. Prepare the Salmon: Cut the salmon into cubes approximately 1 ½ - 2 inches in size and place the cubes in a bowl, ensuring uniform pieces for even cooking.
  2. Make the Marinade: In a small bowl, whisk together honey, olive oil, apple cider vinegar, coconut aminos, minced garlic, grated ginger, salt, and pepper until well combined.
  3. Marinate the Salmon: Pour two-thirds of the marinade over the salmon cubes, gently tossing to coat them evenly. Let the salmon marinate for 20 minutes to absorb the flavors.
  4. Prepare the Dipping Sauce: Pour the remaining one-third of the marinade into a small pan and bring it to a medium-high heat simmer. Let it simmer for about 5 minutes until it reduces and thickens slightly. Remove from heat and transfer to a small bowl to cool.
  5. Preheat the Grill: Heat your grill to high heat, making sure it is properly oiled or non-stick to prevent sticking.
  6. Assemble Skewers: Thread the marinated salmon cubes onto skewers, spacing them evenly to ensure thorough cooking.
  7. Grill the Skewers: Grill the salmon skewers for about 4 minutes per side, turning carefully. During grilling, regularly brush the salmon with any leftover marinade to keep it moist and flavorful, watching for a light char to develop.
  8. Garnish and Serve: Once cooked, remove the salmon from the grill, brush the tops with the thickened dipping sauce prepared earlier, and garnish with white sesame seeds and chopped scallions. Serve any remaining dipping sauce on the side for extra flavor.

Notes

  • Ensure salmon pieces are uniform in size for even cooking.
  • Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill.
  • Adjust grilling time based on thickness of salmon cubes and grill temperature.
  • The coconut aminos can be substituted with soy sauce or tamari for different flavor profiles.
  • This dish pairs well with steamed rice or a fresh Asian slaw for a complete meal.
