Description

These Apple Pie Energy Balls are a delicious and nutritious snack packed with almonds, pecans, medjool dates, dried apple slices, and raisins. Infused with warm cinnamon and a pinch of sea salt, they capture the essence of classic apple pie in a convenient, bite-sized treat. Perfect for on-the-go energy boosts or healthy sweet cravings, these no-bake energy balls are quick to prepare and require just 10 minutes.

Ingredients

Dry Ingredients

  • 1 1/2 cups almonds
  • 1/2 cup pecans
  • 1/2 cup dried apple slices
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • pinch of sea salt

Wet Ingredients

  • 3/4 cup medjool dates (about 10, pitted)

Instructions

  1. Process nuts: Place the almonds and pecans into a food processor and pulse until they are chopped into small pieces. Transfer this nut mixture to a bowl and set aside.
  2. Process dates: Add the pitted medjool dates into the food processor and pulse until they form a sticky paste.
  3. Combine nuts and dates: Return the chopped nuts to the food processor with the date paste.
  4. Add remaining ingredients: Add the dried apple slices, raisins, cinnamon, and a pinch of sea salt to the food processor. Pulse everything together until well combined into a dough-like consistency.
  5. Form balls: Using your hands or a cookie scoop, scoop out the mixture and roll it into small balls.
  6. Store: Place the energy balls in a sealed container. Store them in the refrigerator for up to 1 week or in the freezer for up to 3 months.

Notes

  • Make sure to pit the medjool dates before processing.
  • You can substitute walnuts or cashews for almonds or pecans if preferred.
  • If the mixture is too dry, add a couple of extra dates to help bind the ingredients.
  • For added texture, roll the balls in finely chopped nuts or shredded coconut before storing.
  • Let the balls sit at room temperature for a few minutes before eating if stored in the fridge for a firmer bite.
