Description

These Apple Cider Vinegar, Lemon, and Ginger Gummy Bears are a healthy and paleo-friendly snack that combines the soothing flavors of ginger and lemon with the tang of apple cider vinegar. Perfect for satisfying your snack cravings while supporting digestion and overall wellness.

Ingredients

Liquid Base

  • ½ cup water
  • ½ lemon, sliced
  • 1 inch fresh ginger, peeled and sliced

Sweeteners and Gelatin

  • 1/3 cup honey
  • 2 tbsp grass-fed beef gelatin
  • 2 tsp apple cider vinegar

Instructions

  1. Prepare Infusion: In a small saucepan, combine the water, lemon slices, and peeled ginger slices. Bring the mixture to a boil over high heat to extract the flavors.
  2. Steep: Remove the saucepan from heat and let the infusion sit for 10 minutes to deepen the flavors.
  3. Strain: Strain the liquid to remove the lemon and ginger pieces, leaving a clear infused tea.
  4. Add Sweeteners and Vinegar: Stir in the honey and apple cider vinegar into the warm tea until fully incorporated.
  5. Incorporate Gelatin: Whisk in the grass-fed beef gelatin powder thoroughly to avoid lumps.
  6. Dissolve Gelatin: Heat the mixture over medium heat for about 3-4 minutes, stirring constantly, until the gelatin has fully dissolved. Avoid boiling to preserve gelatin's properties.
  7. Mold and Set: Pour the mixture into silicone gummy bear molds and refrigerate until the gummies are completely set and firm.

Notes

  • Do not let the gelatin mixture boil to ensure proper texture.
  • Use grass-fed beef gelatin for the best quality and paleo compliance.
  • Honey is used as a natural sweetener; adjust amount to taste.
  • Refrigerate gummies for at least 1-2 hours or until firm.
  • Store gummies in an airtight container in the refrigerator for up to one week.
