Ingredients

Crust

  • 1 cup (125 g) all-purpose flour
  • 1/4 cup (50 g) firmly packed light brown sugar
  • 1/2 cup (113 g or 1 stick) unsalted butter, room temperature

Cheesecake Filling

  • 1 1/2 cups (12 ounces) cream cheese, room temperature
  • 1/3 cup (67 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

Apple Layer

  • 2 small apples, peeled, cored, and chopped
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of ground nutmeg (optional)

Streusel Topping

  • 1/2 cup (100 g) firmly packed light brown sugar
  • 1/2 cup (62 g) all-purpose flour
  • 1/4 cup (25 g) rolled oats
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup (56 g or 1/2 stick) unsalted butter, room temperature

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and set aside to prepare for the crust.
  2. Make Crust: In a medium bowl, whisk together 1 cup flour and 1/4 cup brown sugar. Add 1/2 cup butter and use a pastry blender or two forks to cut the butter into the dry ingredients until the mixture becomes crumbly. Press this mixture evenly into the bottom of the prepared pan.
  3. Bake Crust: Bake the crust in the preheated oven for 12 to 14 minutes, or until it turns light golden. Remove from oven and let it warm slightly as you prepare the filling.
  4. Make Cheesecake Mixture: In a large bowl, beat 1 1/2 cups cream cheese with 1/3 cup granulated sugar using an electric mixer at medium speed until creamy and smooth, about 1 minute. Add 1 large egg and 1 teaspoon vanilla extract, then beat until fully combined.
  5. Pour Cheesecake Mixture: Pour the cheesecake filling evenly over the warm crust in the pan.
  6. Prepare Apple Layer: In a small bowl, combine the chopped apples, 1 tablespoon granulated sugar, 1/4 teaspoon cinnamon, and a pinch of nutmeg (if using). Mix well and distribute evenly over the cheesecake layer.
  7. Make Streusel Topping: In another small bowl, mix 1/2 cup brown sugar, 1/2 cup flour, 1/4 cup rolled oats, and 1/4 teaspoon cinnamon. Add 1/4 cup butter and combine with a spoon or your hands until streusel forms small clumps.
  8. Assemble Bars: Sprinkle the streusel topping evenly over the apple layer in the pan.
  9. Bake Bars: Bake for 35 to 40 minutes, or until the streusel is light brown and the cheesecake filling is set.
  10. Cool and Chill: Allow the bars to cool to room temperature in the pan. Then transfer to the refrigerator and chill for at least 3 hours to set fully before serving.
  11. Serve: Cut into 16 bars and serve cold. Enjoy your creamy, fruity, and crumbly apple cheesecake bars!

Notes

  • Use an apple peeler to make chopping apples easier and more uniform.
  • Ensure cream cheese and egg are at room temperature for a smooth cheesecake filling.
  • You can substitute Granny Smith apples for a tart flavor or use a sweeter variety like Fuji depending on preference.
  • Store leftover bars in an airtight container in the refrigerator for up to 4 days.
  • Let the bars chill thoroughly to ensure clean slices and enhanced flavor.
