Description

This Air Fryer Protein Lava Cake recipe is a quick and delicious single-serving dessert that's perfect for a healthy treat. Made with gluten-free flour, chocolate protein powder, and unsweetened cocoa, it offers a rich chocolate flavor with a molten center, all cooked effortlessly in an air fryer in just 20 minutes.

Ingredients

Dry Ingredients

  • 2½ Tbsp 1:1 Gluten Free Baking Flour (17g)
  • 3 Tbsp Chocolate Protein Powder (17g)
  • 2 Tbsp Unsweetened Cocoa Powder (10g)
  • ¼ tsp Baking Powder

Wet Ingredients

  • ¼ cup Unsweetened Almond Milk (60ml)
  • 1½ Liquid Egg White (45g, approx. 3 Tbsp)
  • 1 Tbsp Greek Yogurt (14g)
  • ¼ tsp Vanilla Extract

Add-ins

  • 2 tsp Chopped Chocolate or Chocolate Chips (10g, sugar-free recommended)

Instructions

  1. Prepare Ramekin: Lightly grease a 1 cup ramekin to prevent sticking and ensure easy removal of the lava cake after cooking.
  2. Mix Dry Ingredients: In a bowl, whisk together the gluten-free baking flour, chocolate protein powder, unsweetened cocoa powder, and baking powder until fully combined and smooth.
  3. Mix Wet Ingredients: In a separate bowl, whisk the unsweetened almond milk, liquid egg white, Greek yogurt, and vanilla extract until the mixture is homogenous.
  4. Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until the batter is smooth. Taste the batter and add sweetener if desired for extra sweetness.
  5. Assemble Lava Cake: Pour half of the batter into the prepared ramekin, sprinkle the chopped chocolate or chocolate chips evenly over the batter, then pour the remaining batter on top to cover the chocolate pieces.
  6. Cook in Air Fryer: Place the ramekin in the air fryer basket and cook at 300°F for 14-15 minutes until the cake is set around the edges but still soft in the center to achieve the lava effect.
  7. Cool and Serve: Let the lava cake cool for a few minutes before serving to allow the center to thicken slightly but remain molten. Enjoy warm for the best taste.

Notes

  • Using a 1:1 gluten-free baking flour substitution ensures the cake maintains the right texture.
  • For a sweeter cake, add your preferred sweetener to the batter before cooking.
  • Ensure your air fryer is preheated for more even cooking.
  • Use a silicone brush or spray to grease the ramekin easily and avoid sticking.
  • The cooking time may vary depending on your air fryer model; keep an eye to avoid overcooking.
