Ingredients
Dry Ingredients
- 3 cups (360g) white bread flour (or all-purpose flour as substitute)
- 1 tbsp sugar
- 2 tsp salt
- 2 ¼ tsp rapid rise yeast (one packet)
Wet Ingredients
- 1 cup (240ml) lukewarm water
- 2 tbsp melted butter, plus extra for greasing and brushing
Instructions
- Mix Dry Ingredients: Measure the flour, sugar, salt, and yeast into a mixing bowl. Stir together to combine all the dry ingredients evenly.
- Add Wet Ingredients: Pour in the lukewarm water and melted butter. Mix using a spoon or a dough hook until no dry streaks of flour remain and you have a shaggy, sticky dough.
- Optional Stretch and Fold: If desired, do a couple of “stretch and folds” by greasing your hands with oil, stretching one corner of the dough over to the middle, turning the bowl, and repeating to help develop gluten.
- First Rise: Cover the bowl with a clean towel and leave the dough in a warm spot to rise for 1 hour, allowing it to double in size.
- Shape the Dough: Turn the dough out onto a lightly floured surface. Gently stretch it into a rectangle, fold the top edge towards the center, then fold the bottom edge over the top.
- Form the Loaf: Turn the dough sideways and roll it into a tight roll. Shape it into a ball or “boule,” dusting lightly with flour to prevent sticking.
- Second Rise: Place the dough in a greased 7-inch cake pan, cover it again, and let it rise for 30 minutes until puffed.
- Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes, preparing it for baking.
- Prepare Bread for Baking: Score the top of the risen loaf with a sharp knife to allow expansion. Brush the sides with melted butter to avoid sticking.
- Air Fry Bread: Place the cake pan with dough in the air fryer. Cook at 400°F (200°C) for 15 minutes.
- Continue Baking: Lower the temperature to 350°F (180°C) and bake for an additional 25 minutes to ensure thorough cooking.
- Final Crisping: Carefully remove the pan, take out the bread, and place it directly in the air fryer basket. Cook for 5 more minutes to crisp the bottom of the loaf evenly.
- Check Doneness: Tap the underside of the bread; it should sound hollow. If doughy, air fry a few more minutes as needed.
- Cool and Serve: Transfer the bread to a wire rack and cool completely before slicing for the best texture.
Notes
- You can substitute bread flour with all-purpose flour, though bread flour gives a chewier texture due to higher protein.
- The water should be lukewarm to activate the yeast properly but not hot enough to kill it.
- Stretch and fold technique is optional but helps to develop gluten for better structure.
- Air fryer models vary, so cooking times might need slight adjustments.
- Use melted butter to grease pans and brush the dough sides to prevent sticking and promote browning.
- Letting the bread cool completely before slicing prevents it from becoming gummy inside.
